5 Minutes a Day:: Pecan Caramel Rolls

Here is the latest from my favorite cookbook these days, Artisan Bread in 5 Minutes a Day. I used the regular dough, the work-horse one used for boules, baguettes, and ciabattas, pizza too... and whipped it into some beautiful pecan caramel rolls. Here they are before I flipped them out on the plate.
And flipped out in all their glory. Too bad I was multi-tasking as I was mixing up the batch. Instead of putting 1/4 tsp. of nutmeg into the mixture that goes on the dough and gets rolled up, I added double that into the caramel sauce mixture. They were edible of course, but I think I'd be happy if I never ate nutmeg again.
Have you ever had any big mixups with ingredients or a recipe? Do tell!

Hello Cousin,

I was making a pot pie once and decided that Michael and I didn't need 2 9x13 pans so I cut the recipe in half...except for the Thyme. We choked it down but I've promised myself and Michael that I'll be more careful next time.

I'm going to have to come over someday to taste your breads...the pictures look delicious! Love you!!!

Hi Jenn,

I was making my dad's favorite cookies...GingerSnap Strips...the recipe calls for ground cloves, I put in whole cloves instead! Accidentaly, of course. Since I was only 12, and out of the goodness of my dad's heart, he ate them...crunch after crunch. Incidently, they are supposed to hbe chewy.
The buns look delicious! I bet they were, too.

See you Monday.

that recipe looks so delicious. yum.

my most frequent baking mistake is forgetting the sugar when i’m making plain old muffins. i make them so often, i do it on auto-pilot. but about 1 out of every 6 times i get distracted and forget the sugar .. and they’re just not edible. you want them to taste like a biscuit .. but they don’t.

so now whenever i make muffins (which is often) my sons say DID YOU FORGET THE SUGAR AGAIN?

I love nutmeg, and frequently use the essential oil, as my perfume, so I may have not minded your rolls.

But me--I never screw up a recipe.

except for putting in a tablespoon instead of a teaspoon of orange zest into an algerian tomato soup.

or forgetting eggs in muffins. or the sugar.

or like your cousin, doubling the thyme (I still have a hard time with thyme--tastes like dirt to me at thymes).

I could go on and on.....

But I am usually happy when I double the amount of rum or whiskey in a recipe!
